Chef Romain Foubart's Mediterranean cuisine is rooted in Corsica, and nourished by human encounters and living terroirs. His career with some of France's top chefs has led him to develop an approach that is both demanding and instinctive, and as close to nature as possible.<\/p>

At La Signoria, cooking begins long before the stove: in the nets of the fishermen in Calvi harbour, in the orchards of the Figarella valley, with the market gardeners, breeders, beekeepers and craftsmen of Balagne and beyond. This daily link with the product guides each recipe.<\/p>

Rather than inventing set dishes, the chef works with what the land and sea have to offer. The menu changes according to the harvest, the catch and the season.
